Azienda Agricola Toscanolio - Olive Oil of highest Quality made with Love  
Our Azienda Agricola - these are 1500 olive trees on around 3 hectares of land in the two communities Vicopisano and Buti - both communities are part of the olive oil production area "Monti Pisani". Depending on the year we produce up to 2000 liters of olive oil.

We maintain all our olives following the regulations for biological agriculture, request all the years for the corresponding certification and are inspected by regional authorities. With this our olive oil will receive in 2023 (three years after having moved to biological agriculture) the quality level "BIOLOGICO". This means that - since we have opened our farm in 2020 - we have not been using any chemicals to maintain the trees. Up from the 2023 campaign (olive oil produced in October/November 2023 and sold from end of 2023 to November 2024) we will be allowed to put the labels on the right to our olive oil and to call it Olio Extravergine di Oliva BIOLOGICO. Until then our olive oil is in "conversion".

The quality level “Olio Extravergine di Oliva“ or “olive oil extra virgin” is well known, it is the highest quality level for olive oil with the norms being defined by European Union (oil with this title needs to be produced directly from olives by the use of mechanical means only, its acidity must be below 0,8%). To ensure that our olive oil reaches this quality we start the harvest early in October and complete it in November. A good portion of the olives needs to be still green which means unripe ... green olives give less oil but better quality, so as bigger the portion of green olives is as better our Olio Extravergine di Oliva - L'Olio d'E&E will be.
